Heat the oil in a frying pan. Gradually, add the semolina and the cinnamon stirring constantly, until the flour looks dark brown.
In the meantime, prepare the syrup by boiling the water and the sugar for approximately 10 minutes. Pour the syrup, scalding hot over the mixture and stir constantly, until it thickens up. Remove the frying pan from the fire.
When it cools down a little, place it in small containers such as muffin tins for it to acquire a nice shape. Sprinkle it with walnuts and then serve it onto a platter.
